The red 2020 Príncipe de Salinas is pure Monastrell from 25-year-old vines at 700 meters in altitude on sandy limestone soils from a very good vintage. It fermented in a 300-liter oak barrel, where it matured for one year. It’s ripe at 15.5% alcohol but has a low pH of 3.1 with seven grams of acidity. It has notes of dark fruit, earth and graphite, a little dusty with some rusticity. This is an experiment with Monastrell grapes from other zones, so they produced only one barrel of it. It’s medium to full-bodied and has abundant, slightly dusty tannins. It opened up with time in the glass with more Monastrell typicity and good freshness. Only 300 bottles were filled in November 2021.
