Winemaking
For the Mansano wine, grapes of the Sauvignon Blanc variety are used in Piacenza, its elaboration process is carried out organically, which means that sustainable methods are used, in order to maintain the natural balance of the terroir.
At the optimal ripening point, the grapes are harvested by hand.
The grapes are fermented in the winery, spontaneously with indigenous yeasts, and maceration takes place for 10 months in stainless steel tanks.
After this time, the wine is bottled without fining, filtering or adding sulphur.
