Spontaneous semi carbonic maceration for 8 weeks. Fermented with indigenous yeasts in amphorae. Aged for 3 months in 500 litre chestnut barrels. Bottled unfined and unfiltered.
Description
Cosmic Via Fora Negre wine is the result of processing Sumoll grapes grown in soils that are more than 55 years old, defined as calcareous clayey soils of minimal depth.
The techniques used in the planting of the fruit follow the pattern of organic farming with biodynamic criteria, also ensuring a minimum intervention of machinery or chemicals that accelerate the ripening process of the grapes.
This is a very special wine because it is a tribute to the workers in charge of cultivating the fruit, who follow the ideology of the winegrower, conserving the environment that surrounds them.
Winemaking
The winemaking process begins with the manual harvesting of the grapes, which are then placed in 15 kg boxes to guarantee the preservation of the fruit until it is transferred to the winery.
The whole fruit is then subjected to a carbonic maceration process for at least 7 days, followed by pressing. Fermentation in this wine is spontaneous and is carried out by placing 70% of the juice in stainless steel tanks and the rest in amphorae.
The wine is then aged for 4 months in chestnut barrels. Bottling is carried out without fining or filtering.
Taste
The Cosmic Via Fora Negre wine is characterised by being a young wine with a fruity flavour, but with spicy tones. It is structured and with a balance between acidity and tannins.
