Direct pressing (without skin soaking) in a vertical press for 4 hours. First fermentation with indigenous yeasts in stainless steel tanks up to 20 grams of residual sugar. End of fermentation in the bottle with a minimum ageing of 6 months. Hot disgorging by hand.
