Robert Parker’s Wine Advocate
The 2015 Kaos is the Garnacha from the village of Cebreros in Ăvila, and this same wine I tasted for my previous article on the Gredos zone. Produced with grapes from the Arrebatacapas zone of Cebreros, it fermented with full clusters and matured in 500- and 600-liter oak barriques for 18 months. They feel this wine, from slate soils, needs at least five years in bottle, because it’s very edgy and powerful when young. They haven’t bottled any vintages after this 2015, but they might do it again in the future. They feel this is starting to be drinkable now. It has a darker profile, both because of the soils and also the character of the year. Time in bottle has polished its tannins, but they are still abundant and give it a powdery texture and mouthfeel. 1,350 bottles were filled in February 2017.
