Disgorged in April 2021, the latest rendition of Paillard’s NV Extra-Brut Blanc de Blancs Grand Cru is charming and expressive out of the gates, bursting with aromas of white peach, pear, fresh pastry and white flowers. Medium to full-bodied, pillowy and enveloping, it’s a fleshy, open wine, with bright acids and a pretty pinpoint mousse, concluding with an elegantly chalky finish.
