Robert Parker’s Wine Advocate
Disgorged on July 10, 2020, with three grams per liter dosage, Bollinger’s eagerly awaited 2007 Extra-Brut R. D. is beautiful, unwinding in the glass with aromas of crisp orchard fruit, citrus pith and white flowers mingled with hints of honey, orange oil, buttery pastry, English walnuts and delicately spicy bass notes. Full-bodied, vibrant and incisive, it’s unusually elegant and structurally fine-boned for what is routinely one of Champagne’s more muscular tête de cuvées, with a bright spine of acidity that’s cloaked in vibrant, concentrated fruit, complemented by a pearly pinpoint mousse and concluding with an intensely sapid finish. Long and penetrating, this is a tightly coiled R. D. that will reward bottle age.

Description
Champagne Bollinger R.D. Extra Brut is a bold and splendid representation of a timeless wine. This champagne is the result of the innovative vision of Madame Bollinger, who in 1963, together with her American agent, decided to sell a few bottles of “Réserve 1947” to compete with the prestige cuvées of other champagne houses. Madame Bollinger’s revolutionary idea was to choose an old vintage wine, recently disgorged and dosed as an Extra Brut. This recent disgorgement guarantees the remarkable freshness of the wine, offering the world a truly unique tasting experience.
Winemaking
Bollinger R.D. 2008 is characterised by remarkable precision and opulence. It is composed of 71% Pinot Noir and 29% Chardonnay. In its blend, a total of 18 crus can be found, mainly Aÿ and Verzenay for the Pinot Noir and Le Mesnil-sur-Oger and Cramant for the Chardonnay. Fermentation takes place entirely in oak barrels. This champagne is sold only a few months after disgorgement, with a very low dosage known as extra brut, with only 3 gr/l.
Taste
To the eye, it shines with golden reflections. On the nose, it reveals enticing aromas of marzipan, stewed apricots, honey and breadcrumbs accompanied by fresh notes of bergamot. On the palate, it presents a rich and precise mousse. Citrus notes are followed by flavours of Mirabelle plums and vineyard peaches. It is a very lively wine that unfolds to reveal exceptional complexity. Fresh hazelnut notes and salinity combine to create an intense, long-lasting finish.
